Throughout my life, I was unaware that I had subtle symptoms of Celiac that progressively worsened. It wasn't until I was unable to eat without getting ill and most days unable to swallow foods or my own saliva that I realized something was not right. The process had been gradual, so I wasn't aware of the symptoms that had become my "normal." The medical process took months with multiple doctor visits and finally a referral to a specialist, before I was officially diagnosed with Celiac and EoE.
The diagnosis was the easy part. Eating had become stressful and the reactions continued even after eliminating wheat. After seeing 3 nutritionists who were unable to help, I was at a complete loss. I felt very alone and to be honest, I cried daily in fear of food and the potential reaction. I tried many "diets" including low carb, eating just soup, and just salads. At one point I was living on protein shakes because it seemed to be the only thing "safe," but I knew that was not a long-term solution.
Over time, I learned it wasn't all about the food, there was support available it just wasn't traditional support, stress made my EoE worse, and I was allergic to more than I knew. I had to learn to listen to my body and stop fighting the process.
Today I have learned a self-empowerment process that allows me to focus on solutions. Empowering myself allowed me to change my mindset which changed the course of this dis-ease. I can alter any recipe to fit my personal needs, address my needs in any restaurant, and bypass the upset at gatherings when foods are unavailable. My personal empowerment process freed me from food anxiety and allowed me to live my life fully again!
